Mayuko Ieiri of Mayuko’s Kitchen shows how to make popular Japanese cakes, using ingredients readily available in Glasgow, Scotland. For ‘Matcha Roll Cake’, matcha, Japanese finely ground powder tea, and aduki, a reddish-brown bean, are used. Golden syrup is used for ‘Castilla Cake’, which was introduced to Japan by Portuguese missionaries in the 16th century, but is one of most popular cakes in the country. In addition, she talks about her ideas for making Japanese ingredients attractive for Scottish people.
